Step 1

Preheat oven to 350f degrees.

Step 2

Peel the sweet potato (or yam) and cut into 3/4 inch cubes. Cut the onion into 8 wedges. Place the sweet potato cubes and onion wedges into a veggie sprayed 13 x 9 inch baking dish. In a separate bowl, combine the orange juice, brown sugar, rosemary, salt and pepper; dried cranberries if using; pour the mixture over the veggies stirring well to coat; dot with margarine (or butter). Cover with foil and bake 30 minutes, stirring occasionaly. Stir in apple slices and bake uncovered a further 15 minutes or until fruit and veggies are tender. serve hot.

Great recipe! I did cut it down by a little as I had one sweet potato I wanted to use - cooked everything in an 8 x 8 pan but for the time recommended. Great potatoes! Thanks for sharing!

Excellent recipe - great combination of flavours. I used the cranberries and they add a nice tang. Thanks Derf for a lovely side dish that will be made again.
