Step 1: Preheat oven to 350f degrees.
Step 2: Peel the sweet potato (or yam) and cut into 3/4 inch cubes. Cut the onion into 8 wedges. Place the sweet potato cubes and onion wedges into a veggie sprayed 13 x 9 inch baking dish. In a separate bowl, combine the orange juice, brown sugar, rosemary, salt and pepper; dried cranberries if using; pour the mixture over the veggies stirring well to coat; dot with margarine (or butter). Cover with foil and bake 30 minutes, stirring occasionaly. Stir in apple slices and bake uncovered a further 15 minutes or until fruit and veggies are tender. serve hot.
