Ingredients

The ingredients are:
  • 1 pound sweet potatoes (2-3 medium, or yams)
  • 1 medium yellow onion
  • 1/4 cup orange juice
  • 1 tablespoon brown sugar, packed (I use splenda brown mix)
  • 1/4 teaspoon dried rosemary, crumbled (Or 3/4 teaspoon fresh, chopped)
  • 1/4 cup dried cranberries (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper, freshly ground
  • 1 tablespoon margarine (Becel, or butter)
  • 1 apple (medium apple, unpeeled, cored and sliced, granny smith is best)

How to Make

  • Step 1: Preheat oven to 350f degrees.

  • Step 2: Peel the sweet potato (or yam) and cut into 3/4 inch cubes. Cut the onion into 8 wedges. Place the sweet potato cubes and onion wedges into a veggie sprayed 13 x 9 inch baking dish. In a separate bowl, combine the orange juice, brown sugar, rosemary, salt and pepper; dried cranberries if using; pour the mixture over the veggies stirring well to coat; dot with margarine (or butter). Cover with foil and bake 30 minutes, stirring occasionaly. Stir in apple slices and bake uncovered a further 15 minutes or until fruit and veggies are tender. serve hot.
