Step 1

Whip together the oil, salt, pepper, vinegar, sugar and parsley

Step 2

Arrange the tomatoes, cucumber and onion rings artistically on two serving plates

Step 3

Pour on the dressing, place in fridge for about 2 hours before serving

The dressing is terrific in the salad recipe. I used grape tomatoes for this and served it over a bed of romaine lettuce. just lovely!! Made for the Summer Salads Challenge Event and The Alphabet Soup Recipe Tag Game. Update March 24th 2020 I made this again but this time used green onions instead of white onions and did not use parsley as there was none left in the stores (Bad time to shop for food) Fantastic!!!
