Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Place squashes skin-side up in baking dish. Add 1 inch water.

Step 3

Bake for 40 minutes and remove from oven.

Step 4

Meanwhile, in a skillet over medium heat melt the butter and then add the leeks, apple and almonds, saluting until leeks are tender (3-5 minutes). Place mixture in a bowl and add the brown sugar and cheese. Season with salt and pepper. Divide mixture among the partially cooked squashes.

Step 5

Return to oven and bake for 30 minutes or until tender.

This was good and so filling. I reduced the servings to 1 and we had 1/2 a butternut squash a piece. We both have leftovers for tomorrow. This was pretty and Autumn looking.
