Step 1: Preheat oven to 350 degrees F.
Step 2: Place squashes skin-side up in baking dish. Add 1 inch water.
Step 3: Bake for 40 minutes and remove from oven.
Step 4: Meanwhile, in a skillet over medium heat melt the butter and then add the leeks, apple and almonds, saluting until leeks are tender (3-5 minutes). Place mixture in a bowl and add the brown sugar and cheese. Season with salt and pepper. Divide mixture among the partially cooked squashes.
Step 5: Return to oven and bake for 30 minutes or until tender.
