Ingredients

The ingredients are:
  • 4 dumpling or butternut squashes, halved and seeded
  • 3 tablespoons butter
  • 2 leeks, trimmed and sliced
  • 2 apples, peeled, cored and chopped
  • 1/2 cup almonds, slivered
  • 1/2 cup brown sugar
  • 4 ounces cheddar cheese, grated (this is 1 cup)
  • Salt
  • Pepper

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Place squashes skin-side up in baking dish. Add 1 inch water.

  • Step 3: Bake for 40 minutes and remove from oven.

  • Step 4: Meanwhile, in a skillet over medium heat melt the butter and then add the leeks, apple and almonds, saluting until leeks are tender (3-5 minutes). Place mixture in a bowl and add the brown sugar and cheese. Season with salt and pepper. Divide mixture among the partially cooked squashes.

  • Step 5: Return to oven and bake for 30 minutes or until tender.
