Step by Step Method
Step 1
Preheat oven to 180C.
Step 2
Remove stalks/stems from mushrooms, chop and set aside.
Step 3
Place mushrooms cups into a lightly greased baking dish.
Step 4
Cook bacon, mushroom stalks/stems, spring onions and capsicum in frying pan for 5 minutes over medium heat and season with salt and pepper to taste and transfer to a bowl and cool.
Step 5
Add egg and 1 cup of the cheese to cooled mixture and then spoon into mushroom cups.
Step 6
Combine remaining cheese and breadcrumbs and sprinkle over filling and bake for 10 minutes or until golden brown.
