Step 1: Preheat oven to 180C.
Step 2: Remove stalks/stems from mushrooms, chop and set aside.
Step 3: Place mushrooms cups into a lightly greased baking dish.
Step 4: Cook bacon, mushroom stalks/stems, spring onions and capsicum in frying pan for 5 minutes over medium heat and season with salt and pepper to taste and transfer to a bowl and cool.
Step 5: Add egg and 1 cup of the cheese to cooled mixture and then spoon into mushroom cups.
Step 6: Combine remaining cheese and breadcrumbs and sprinkle over filling and bake for 10 minutes or until golden brown.
