Ingredients

The ingredients are:
  • 375 grams Portobello mushrooms (8 mushrooms)
  • 120 grams bacon, chopped (4 shortcut/Canadian style bacon)
  • 4 spring onions, chopped
  • 86 grams red capsicum (chopped, 1/2 pepper)
  • 1 large egg, lightly beaten
  • 1 1/4 cups cheddar cheese, grated
  • 1/3 cup breadcrumbs

How to Make

  • Step 1: Preheat oven to 180C.

  • Step 2: Remove stalks/stems from mushrooms, chop and set aside.

  • Step 3: Place mushrooms cups into a lightly greased baking dish.

  • Step 4: Cook bacon, mushroom stalks/stems, spring onions and capsicum in frying pan for 5 minutes over medium heat and season with salt and pepper to taste and transfer to a bowl and cool.

  • Step 5: Add egg and 1 cup of the cheese to cooled mixture and then spoon into mushroom cups.

  • Step 6: Combine remaining cheese and breadcrumbs and sprinkle over filling and bake for 10 minutes or until golden brown.
