"You can stuff cucumbers with just about anything and its delicious! In this recipe I use http://www.recipezazz.com/recipe/deviled-ham my deviled ham recipe to stuff them with. Of course you can use whatever you like, this is more of a method for stuffed cucumbers."

Step by Step Method

Step 1

Peel the cucumber. Cut off the ends.

Step 2

Slice the cucumber is 1 inch slices.

Step 3

With a melon baller or a spoon, carefully scoop the seeds from the middle of the cucumber, being careful not to go all the way through.

Step 4

Add in your "stuffing" and garnish with whatever you want to use.

Step 5

Arrange on a plate and serve as Hor D'oeuvres or appetizers. Very tasty! I like the hint on heat that the jalepeno's bring with the coolness of the cucumber.

I made for lunch and used chopped ham shoulder with mustard, mayo and onion, then topped each with half an olive. Oh my word! So good!

I ground up some ham that I had leftover from Easter. Then stuffed the cucumbers with the ham, onion and dill pickles mixed with a mustard/mayo combo. I topped each piece with a slice of green olive. They were extra delicious for lunch! Love trying new things!
