"In looking for pink things to make, I ran into this recipe on Epicurious. I love all those ingredients, so I'm keeping this where I can find it - right here! I thought I had strawberries in the freezer that turned out to be raspberries - worked fine with them, too! And a lovely shade of pink!"

Made as written for the Central American region of CQ4 & the Happy Campers team. I scaled this down to a single serving & combined it w/a Scandinavian recipe for a mid-morning fusion-style breakfast. I forgot the strawberry garnish at the end of the prep as I was sprinkling toasted coconut atop the surface. Like most smoothies, it borders on being "dessert in a glass", but is not overly sweet. It actually seems more naturally sweet than "additive sweetened". I liked this a lot & expect to repeat it later in the yr for house guests. It's so easy to do something special like this when you need it. Thx for sharing this recipe w/us for the CQ4.
