"This recipe was found on the net courtesy of The Straits Cafe. Per the intro, "Tofu for dessert? Well, you've never had a treat like this!" I don't know how a recipe could be any easier than this, but plan ahead as this needs to chill overnight. The 5 min prep time of course doesn't include the chill time. Enjoy!"

Step by Step Method

Step 1

In a blender, combine all ingredients & blend until smooth & creamy. Like so many other recipes using a blender, I would favor using my immersion blender for this.

Step 2

Pour into individual serving dishes or pudding glasses & chill overnight.

I thought this pudding was pretty tasty, but then again I like the flavor of plain old tofu! DH didn't find it as appealing. I'll probably make this again, and would definitely use silken tofu and a bit more honey. I used what was already in the fridge (which wasn't silken) and it had a grainy texture. The pudding didn't set up, but I didn't find that to be a problem - it's still pretty thick!
