"The ingredients give lovely colour to this recipe making it an attractive as well as a tasty dish to serve. The recipe was originally from "Taste of Home" by Mildred Fox with several changes by me. This recipe is hearty enough to enjoy for a light dinner' I like to add about 1/4 cup milk, 1 tablespoon flour & 2 tablespoons cottage cheese or sour cream to my eggs. It gives them a slightly heavier texture. Also when serving try a little Thai chili sauce on th side"

Step by Step Method
Step 1
Heat the olive oil in a large skillet.
Step 2
Saute chopped onions for 4 minutes.
Step 3
Add zucchini to the pan.
Step 4
Stir fry for 2 minutes.
Step 5
Remove onions & zuke from the pan and wipe the pan clean.
Step 6
Add the cheese, ham salt & pepper to the beaten eggs.
Step 7
Lightly spray the pan with oil.
Step 8
Heat on medium high.
Step 9
Return the onions & zucchini to the pan.
Step 10
Pour in the egg mixture.
Step 11
Cover the pan.
Step 12
Allow the mixture to settle lifting the edge and letting the uncooked egg run under.
Step 13
Continue cooking until the egg is firm.
Step 14

- Large skillet with a lid
