Step by Step Method

Step 1

In a 2-quart saucepan heat butter. Add in garlic; cook 2 minutes or until soft. Add in broth and Italain seasoning. Bring to a boil over medium heat.

Step 2

Stir the rice, spinach, salt and pepper in the saucepan. Reduce the heat to low. Cover and cook for 20 minutes or until the rice is tender. Stir in the cheese. Serve with additional cheese.

This has quickly become a must for me at least once every couple of weeks. It is so delicious that I find myself wanting it very often! I love the spinach in with the rice. It makes me feel like I am eating healthy! I used reduced fat Parmesan cheese, brown rice and low sodium chicken broth to shave calories, and lower sodium and fat. A real must try now kind of recipe!

I sprinkled Parmesan and Asiago cheese over it before serving. It kind of melted in and made it taste great. We love this and I will experiment using different greens and other spices. Brown rice works well for this. I made it to go with baked talipia and had butternut squash too. A really great meal!

Engrossed

FANTASTIC rice recipe! Flavorful and cheesy. Great side dish for fish. I used extra-long grain white rice and water with chicken bouillon. I subbed olive oil for the butter and kale for the spinach. This one's a keeper. Made for the Billboard recipe tag game.
