"Black Alaska Cod is worth it's weight in gold but it is so good. As a special treat I still buy it. Be sure to buy only thick pieces (about 1 1/2 inche thick). The thin wedges taste over smoked and you a paying for skin and no flesh. This recipe is so simple! This recipe works with Eastern Smoked Cod as well"
