Step 1

Make Blue Cheese Slaw - combine all the ingredients in a bowl and cover and then refrigerate until needed (this can be done a few hours in advance, but no more that that, as the slaw will lose its freshness).

Step 2

Preheat oven to 220C/200 C fan forced.

Step 3

Place chicken in a large bowl and add flour, salt, white pepper and cinnamon and toss the chicken to coat.

Step 4

Line a large baking tray with baking paper and place chicken on the prepared tray, spreading out so pieces don't overlap and bake for 30 to 35 minutes or until golden and cook through.

Step 5

Transfer chicken to a bowl and add Sriracha, butter and vinegar and toss chicken in mixture to melt butter and coat evenly.

Step 6

Serve chicken with the chilled blue cheese slaw.
