Ingredients

The ingredients are:
  • 2.5 kilograms chicken wings (tips removed and halved, 24 wings)
  • 2 cups all-purpose flour (plain)
  • 2 teaspoons sea salt
  • 1 teaspoon ground white pepper
  • 1 teaspoon ground cinnamon
  • 1/4 cup chilli sauce (Sriracha chilli sauce)
  • 100 grams butter
  • 1/4 cup white wine vinegar
  • FOR BLUE CHEESE SLAW
  • 125 grams blue cheese (crumbled)
  • 2 tablespoons fresh lemon juice
  • 1/3 cup mayonnaise (whole-egg)
  • 1/2 teaspoon freshly ground black pepper
  • 1 celery stalk (finely chopped)
  • 2 carrots, coarsely grated
  • 3 green onions, thinly sliced diagonally
  • 4 cups cabbage (finely chopped savoy cabbage)

How to Make

  • Step 1: Make Blue Cheese Slaw - combine all the ingredients in a bowl and cover and then refrigerate until needed (this can be done a few hours in advance, but no more that that, as the slaw will lose its freshness).

  • Step 2: Preheat oven to 220C/200 C fan forced.

  • Step 3: Place chicken in a large bowl and add flour, salt, white pepper and cinnamon and toss the chicken to coat.

  • Step 4: Line a large baking tray with baking paper and place chicken on the prepared tray, spreading out so pieces don't overlap and bake for 30 to 35 minutes or until golden and cook through.

  • Step 5: Transfer chicken to a bowl and add Sriracha, butter and vinegar and toss chicken in mixture to melt butter and coat evenly.

  • Step 6: Serve chicken with the chilled blue cheese slaw.
