Step 1

Drizzle oil over bottom of a large skillet and bring to medium heat.

Step 2

Add the leeks mushrooms, smoked paprika and garlic powder.

Step 3

Cook until leeks are translucent.

Step 4

Rinse spinach and add to skillet.

Step 5

Cook until soft and season with salt and pepper to taste.

What a tasty, simple, lovely recipe! I needed a last-minute substitution for our Christmas dinner, and this filled the bill quite nicely. The smoked paprika gave it a depth of flavour I wasn't expecting, and we liked it a lot! I thought the nutrition information was a bit off, so I ran it through another database and came up with vastly different (and much lower) numbers, even based on two servings. Definitely one I'll be making again!

Derf "RIP" Forever in our Kitchen

mmm we really loved this spinach ! I had no smokey paprika, I used Hungarian paprika cus that 's what i had, it was the star of recipe, gave a wonderful bite to it, i was also out of garlic powder, I used chopped fresh garlic. First time i've used leeks with spinach and it sure won't be the last time, they were perfect with the spinach. Thanks for posting !!
