Step 1: Drizzle oil over bottom of a large skillet and bring to medium heat.
Step 2: Add the leeks mushrooms, smoked paprika and garlic powder.
Step 3: Cook until leeks are translucent.
Step 4: Rinse spinach and add to skillet.
Step 5: Cook until soft and season with salt and pepper to taste.
