Step by Step Method
Step 1
Preheat the oven to 350F.
Step 2
Pound chicken breasts until thin; set aside.
Step 3
In a heavy oven proof skillet, over medium-well, heat olive oil. Add Spinach and garlic; cook until the spinach is wilted and the garlic is fragrant.
Step 4
Take the pan off the burner and add the feta; mix well.
Step 5
Distribute the feta onto each breast then roll the breast in the breadcrumbs and fasten with either a toothpick or wrap in kitchen twine ( preferred).
Step 6
Wipe out the skillet ( or use a glass pan) and place the chicken inside.
Step 7
Pour the melted butter over.
Step 8
Bake for 30 minutes.
