Ingredients

The ingredients are:
  • 4 chicken breasts (boneless skinless)
  • 2 tablespoon garlic (chopped)
  • 2 tablespoons oil (olive oil_
  • Fresh spinach (1 package or 1 box frozen)
  • 1 cup feta cheese, crumpled
  • Seasoned bread crumbs (2 cups)
  • 1/3 cup butter, unsalted (melted)

How to Make

  • Step 1: Preheat the oven to 350F.

  • Step 2: Pound chicken breasts until thin; set aside.

  • Step 3: In a heavy oven proof skillet, over medium-well, heat olive oil. Add Spinach and garlic; cook until the spinach is wilted and the garlic is fragrant.

  • Step 4: Take the pan off the burner and add the feta; mix well.

  • Step 5: Distribute the feta onto each breast then roll the breast in the breadcrumbs and fasten with either a toothpick or wrap in kitchen twine ( preferred).

  • Step 6: Wipe out the skillet ( or use a glass pan) and place the chicken inside.

  • Step 7: Pour the melted butter over.

  • Step 8: Bake for 30 minutes.
