Spicy Sausage Skillet Breakfast

"This recipe is based upon on that I found in my collection of cookbooks. The reason I said based,is the amounts and certain ingredients were changed due to mine and my SO's tastes. The original recipe didn't include eggs,but since it included sausage, I thought " Why Not ? " If you have any leftovers,roll into warm tortillas and make enchiladas or chimichangas. Step by Step Method
Step 1
In a large skillet over medium heat,crumble sausage and add onion then cook until sausage is done and onion is soft (if needed drain fat).
Step 2
Return to skillet and except for cheese,add all remaining ingredients and stir well.
Step 3
Cover with lid and simmer until all liquid is absorbed about 8 to 10 minutes, stirring occasionally.
Step 4
Remove lid and sprinkle cheese over top of rice.
