Ingredients

The ingredients are:
  • 3 cups cooked rice
  • 1 pound breakfast sausage (mild)
  • 1/2 cup chopped yellow onion
  • 1 can (10 ounce) diced tomatoes (with chilies, Ro-tel)
  • 1 tablespoon chili powder
  • 1 cup shredded Monterey Jack cheese

How to Make

  • Step 1: In a large skillet over medium heat,crumble sausage and add onion then cook until sausage is done and onion is soft (if needed drain fat).

  • Step 2: Return to skillet and except for cheese,add all remaining ingredients and stir well.

  • Step 3: Cover with lid and simmer until all liquid is absorbed about 8 to 10 minutes, stirring occasionally.

  • Step 4: Remove lid and sprinkle cheese over top of rice.
