Step 1: In a large skillet over medium heat,crumble sausage and add onion then cook until sausage is done and onion is soft (if needed drain fat).
Step 2: Return to skillet and except for cheese,add all remaining ingredients and stir well.
Step 3: Cover with lid and simmer until all liquid is absorbed about 8 to 10 minutes, stirring occasionally.
Step 4: Remove lid and sprinkle cheese over top of rice.
