"This is a perfect condiment to serve with seafood, chicken, or pork. It's a bit spicy; but, the sweetness of the pineapple offsets the spicy jalapeno. It is quick and easy to make. Best made with fresh pineapple; however, you can make it with canned pineapple too. I prefer to use a red jalapeno; but, use what is in season. For less heat, use a cubanelle, datil, poblano, etc. Always use seasonal ingredients. Cooking time includes time for the salsa to marinade."

Step by Step Method

Step 1

Salsa ... Add all the ingredients to a small bowl and toss to combine. I only add sugar, depending on the sweetness of the pineapple. Cover with plastic wrap; and, refrigerate 30 minutes or so. This can be served room temp or chilled.

Step 2

Serve ... Spoon over seafood, chicken, or pork. My favorite happens to be grilled seafood - tilapia or scallops are a couple of my favorite 'quick' dishes. It's sweet and spicy; and just a nice condiment. Add rice and a vegetable; and, you have a nice easy dinner. ENJOY!

This is a very versatile condiment! I served it tonight along side a sSoppy Joe and tomorrow it will go long side a salmon filet. Lovely tang to it. I used a wee bit of sugar and only made a half recipe. Next time I will make the whole recipe because it disappears so quickly.
