Ingredients

The ingredients are:
  • 1 whole finely diced (2 pound) pineapple (small ripe pineapple)
  • 1/4 cup scallions, diced finely (white and green parts)
  • 2 tablespoons minced jalapeno pepper (ribs and seeds removed)
  • 3 tablespoons fresh lime juice
  • 3 tablespoons fresh chopped cilantro
  • Pinch of sugar, optional (depending on the sweetness of the pineapple - you can also use a drizzle of honey)
  • 1 teaspoon oil (vegetable oil or any neutral oil)
  • Salt, to taste

How to Make

  • Step 1: Salsa ... Add all the ingredients to a small bowl and toss to combine. I only add sugar, depending on the sweetness of the pineapple. Cover with plastic wrap; and, refrigerate 30 minutes or so. This can be served room temp or chilled.

  • Step 2: Serve ... Spoon over seafood, chicken, or pork. My favorite happens to be grilled seafood - tilapia or scallops are a couple of my favorite 'quick' dishes. It's sweet and spicy; and just a nice condiment. Add rice and a vegetable; and, you have a nice easy dinner. ENJOY!
