Step 1: Salsa ... Add all the ingredients to a small bowl and toss to combine. I only add sugar, depending on the sweetness of the pineapple. Cover with plastic wrap; and, refrigerate 30 minutes or so. This can be served room temp or chilled.
Step 2: Serve ... Spoon over seafood, chicken, or pork. My favorite happens to be grilled seafood - tilapia or scallops are a couple of my favorite 'quick' dishes. It's sweet and spicy; and just a nice condiment. Add rice and a vegetable; and, you have a nice easy dinner. ENJOY!
