Step by Step Method
Step 1
Seed the cucumber and cut it into matchstick sized strips.
Step 2
Cut the carrots into strips the same size.
Step 3
Peel the shallots and cut in half, then slice finely.
Step 4
Bring a saucepan of water to the boil and cook the noodles according to packet instructions until just underdone.
Step 5
Refresh under cold water and drain.
Step 6
Set aside.
Step 7
Shred the coriander and mint.
Step 8
Put all the ingredients except the herbs in a large mixing bowl and combine thoroughly.
Step 9
Put into a serving dish and sprinkle the herbs on top.
