Step 1: Seed the cucumber and cut it into matchstick sized strips.
Step 2: Cut the carrots into strips the same size.
Step 3: Peel the shallots and cut in half, then slice finely.
Step 4: Bring a saucepan of water to the boil and cook the noodles according to packet instructions until just underdone.
Step 5: Refresh under cold water and drain.
Step 6: Set aside.
Step 7: Shred the coriander and mint.
Step 8: Put all the ingredients except the herbs in a large mixing bowl and combine thoroughly.
Step 9: Put into a serving dish and sprinkle the herbs on top.
