Ingredients

The ingredients are:
  • 2 medium carrots, peeled
  • 1 cucumber, peeled
  • 2 shallots
  • 4 ounces beans sprouts
  • 3 red chilies, seeded and finely sliced
  • 7 ounces rice vermicelli noodles
  • 6 tablespoons Nuoc Cham
  • 1 small bunch coriander
  • 1 small bunch mint

How to Make

  • Step 1: Seed the cucumber and cut it into matchstick sized strips.

  • Step 2: Cut the carrots into strips the same size.

  • Step 3: Peel the shallots and cut in half, then slice finely.

  • Step 4: Bring a saucepan of water to the boil and cook the noodles according to packet instructions until just underdone.

  • Step 5: Refresh under cold water and drain.

  • Step 6: Set aside.

  • Step 7: Shred the coriander and mint.

  • Step 8: Put all the ingredients except the herbs in a large mixing bowl and combine thoroughly.

  • Step 9: Put into a serving dish and sprinkle the herbs on top.
