"Modified recipe from Cooking Light, October 2009. Note: To tenderize pork loin chops, soak chops in a mixture of 1 cup water combined with 1 tablespoon baking soda, for 1-2 hours. Rinse chops well under running water, and dry on paper towels before proceeding!"

Step by Step Method

Step 1

Heat a nonstick skillet over medium-high heat.

Step 2

Sprinkle pork with approximately 1/8 teaspoon garlic salt, and very lightly sprinkle on cayenne pepper (optional).

Step 3

Combine coriander, cumin, smoked paprika, and sugar in a shallow bowl. Sprinkle spice mixture over one side of pork.

Step 4

Add oil to pan; swirl to coat. Add pork to pan, spice side down.

Step 5

Cook 2 minutes on one side, until browned.

Step 6

Turn pork over, and cook 4 minutes, or until done.

Very good chops - skipped the cayenne but otherwise made as directed increasing everything for 8 chops. I think these would also be great on the grill. Thanks for sharing!

The seasoning quite unlike the ones we generally use and super pleased to find I loved these chops. Made using chops I knew were very tender, but the ones I just put in the freezer are on the tough side, will be giving your soak a try. Can't wait to summer to do these on the BBQ!
