Ingredients

The ingredients are:
  • 8 ounces boneless pork loin chops (2 chops, about 3/4 inch thick)
  • 1/8 teaspoon garlic salt
  • Cayenne pepper (for sprinkling ~ optional)
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon brown sugar
  • 1/2 tablespoon olive oil

How to Make

  • Step 1: Heat a nonstick skillet over medium-high heat.

  • Step 2: Sprinkle pork with approximately 1/8 teaspoon garlic salt, and very lightly sprinkle on cayenne pepper (optional).

  • Step 3: Combine coriander, cumin, smoked paprika, and sugar in a shallow bowl. Sprinkle spice mixture over one side of pork.

  • Step 4: Add oil to pan; swirl to coat. Add pork to pan, spice side down.

  • Step 5: Cook 2 minutes on one side, until browned.

  • Step 6: Turn pork over, and cook 4 minutes, or until done.

Don't forget the following tips and variations.
  • Note: To tenderize pork loin, soak chops in a mixture of 1 cup water combined with 1 tablespoon baking soda, for 1-2 hours. Rinse chops well under running water, and dry on paper towels before proceeding!
