Step by Step Method
Step 1
Grate cucumber with large holes of a grater into a bowl, add salt and crushed garlic.

Let stand a few minutes, then squeeze out some of the moisture with super clean hands.

Stir drained cucumber mixture into Greek yogurt (or substitute sour cream).
Step 4
Stir in green onion, saving a bit to sprinkle on top for serving.
