Step by Step Method

Step 1

In a large skillet, heat 1 tablespoon oil. Add the eggs. Cook, stirring, to desired doneness. Remove from the skillet and set aside.

Step 2

In the same skillet, heat the remaining 1 tablespoon oil Cook the spam, carrots, green onions, and bell pepper for 4 minutes or until the vegetables are tender.

Step 3

Stir in the rice and egg. Sprinkle with the soy sauce. Heat thoroughly.

Step 4

Garnish with additional green onions.

I made this recipe only because I had leftover Spam from making Musubi for SWT 2018. Oh my - but this is SO GOOD!!! Followed recipe exactly except for the preparation of the eggs. I didn't scramble them, but rather made a large very thin omelet, then used a pizza cutter to slice into small squares. Just for appearance - as this is how I usually make my fried rice. Like Mike, I used low sodium Spam since my dislike for the product is because of the extreme saltiness. This was incredibly good, and will definitely make it again! Made for play in SWT 2018, team IncrEdibles.

This was exactly as advertised: fast and good! I didn't have Teriyaki flavored Spam, so I added a couple tablespoons of Teriyaki sauce at the same time as the soy sauce. Made for SWT 2018

I wasn’t sure about using Spam in this, as I dislike fried Spam, but in this dish it is just heated quickly. I used the lower sodium version. This turns out to be almost a meal in itself, but I served as a side to salmon.

I made this with cauliflower rice rather than steamed rice. Very quick and easy to put together.
