Step 1: In a large skillet, heat 1 tablespoon oil. Add the eggs. Cook, stirring, to desired doneness. Remove from the skillet and set aside.
Step 2: In the same skillet, heat the remaining 1 tablespoon oil Cook the spam, carrots, green onions, and bell pepper for 4 minutes or until the vegetables are tender.
Step 3: Stir in the rice and egg. Sprinkle with the soy sauce. Heat thoroughly.
Step 4: Garnish with additional green onions.
