Step by Step Method

Step 1

Add all ingredients to a 4 quart dutch oven and mix to combine.

Step 2

Cook over medium low heat and stir frequently. When soup is hot and cheese is melted serve in bowls and garnish with fresh chopped cilantro if desired.

This is a very tasty soup, cheesy with a bit of heat from the peppers... I bought Walmart brand tomatoes with green chilies and they were pretty hot. Next time I will get the regular Ro-tel tomatoes with green chilies, as they are a bit milder. Also, I substituted kidney beans for the black beans, because that is what I had on hand, and I like them better than black beans. It was very good. I will have this soup again sometime this winter when it's cold outside and I want to warm up! Thanks for sharing your recipe with us Lori! Linda
