Step by Step Method
Step 1
In large covered saucepan, fry bacon until crisp and remove from pan.
Step 2
Saute onions, celery and bell pepper in bacon grease until soft.
Step 3
Crumble bacon and return to pot.
Step 4
Add rice, stir to coat rice with grease.
Step 5
Measure reserved drained tomato juice, tomato sauce and enough water to measure 3 cups of liquid.
Step 6
Add drained tomatoes .
Step 7
Lower heat until barely simmering.
Step 8
Cover pot and simmer for 25 minutes.
Step 9
Let sit for 5 minutes off the heat, covered.
Step 10
Fluff with fork and serve.
