Ingredients

The ingredients are:
  • 6 ounces bacon, (6 slices)
  • 1 cup onion, chopped
  • 2 stalks celery, chopped
  • 1/2 cup bell pepper, chopped
  • 14 ounces dry white rice, (2 cups)
  • 16 ounces tomatoes, drain ,reserve juice (1 can)
  • 8 ounces tomato sauce (1 can)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon tabasco sauce, to taste

How to Make

  • Step 1: In large covered saucepan, fry bacon until crisp and remove from pan.

  • Step 2: Saute onions, celery and bell pepper in bacon grease until soft.

  • Step 3: Crumble bacon and return to pot.

  • Step 4: Add rice, stir to coat rice with grease.

  • Step 5: Measure reserved drained tomato juice, tomato sauce and enough water to measure 3 cups of liquid.

  • Step 6: Add drained tomatoes .

  • Step 7: Lower heat until barely simmering.

  • Step 8: Cover pot and simmer for 25 minutes.

  • Step 9: Let sit for 5 minutes off the heat, covered.

  • Step 10: Fluff with fork and serve.
