Step 1: In large covered saucepan, fry bacon until crisp and remove from pan.
Step 2: Saute onions, celery and bell pepper in bacon grease until soft.
Step 3: Crumble bacon and return to pot.
Step 4: Add rice, stir to coat rice with grease.
Step 5: Measure reserved drained tomato juice, tomato sauce and enough water to measure 3 cups of liquid.
Step 6: Add drained tomatoes .
Step 7: Lower heat until barely simmering.
Step 8: Cover pot and simmer for 25 minutes.
Step 9: Let sit for 5 minutes off the heat, covered.
Step 10: Fluff with fork and serve.
