" Great to serve as a quick dinner, lunch or after the game. I like to remove the casing on the sausage as they are sometimes tough - depends on the sausage. Portuguese buns are great for this recipe or you could use a tortilla. Double or triple the recipe if you want. Grainy mustard goes well on the sausage"

Step by Step Method

Step 1

Lightly spray a large skillet with oil , medium heat

Step 2

Brown the sausages for a minute, add the peppers, onions and mushrooms, stir fry for 5 minutes

Step 3

Pour in the italian dressing and let it bubble and reduce to nothing. Season with salt and pepper. Stir the vegetables a few times so they don't burn. Takes approximately 6 minutes

Step 4

Place the sausage on the bun and divide the vegetable between the two buns

I actually smoked my own sausage and then made this to have in sub rolls! The mushrooms were a great addition to how we are used to having them and we didn't use the dressing. Instead we topped them with ketchup. They are really delicious. Reminds me, it's almost fair time!
