"This is so tasty. You don't have to add the guacamole but I found it to add so much to the overall flavour. Use your own favorite guacamole recipe. For a large appetite it serves one person. I find if your heat is right you do not have to lift and swirl the uncooked batter under. It is up to you how you do it. I just leave mine for 5 minutes and it comes out perfect every time."

Step by Step Method
Step 1
Beat the eggs, cottage cheese, milk and flour together - really beat the mixture well
Step 2
Add butter to a large skillet over medium high heat
Step 3
Add the shalotts & mushrooms, fry for 2 minutes
Step 4
Add egg mixture, lower heat a bit, cover and cook for 2 minutes
Step 5
Add gruyere, cover, and continue cooking for 3 more minute
Step 6
Serve with the guacamole on top.
