Step 1

Preheat oven to 350 degrees F.

Step 2

Whisk together all ingredients in a medium mixing bowl.

Step 3

Lightly mist 4 (1/2 cup) ramekins with non-stick cooking spray, and evenly divide egg mixture into bowls.

Step 4

Place ramekins on a cookie sheet, and bake 20 minutes, or until eggs puff are almost set in the center. Serve hot.

This is such a delicious breakfast. I enjoy it often, and it's full of protein and low on carbs! Fits right into my healthy eating for my diabetes!

I made the whole recipe for the two of us as our main for dinner and served it with toast. I did add some hot pepper flakes to give it a wee bit of zip. It is light and filling at the same time. We thoroughly enjoyed this way of making eggs. Looking forward to sharing this with family. Thanks Linda for another keeper recipe! Made for Billboard Recipe Tag.
