Step 1

Get out a large skillet and heat the olive oil over medium high heat.

Step 2

Mix in the onion, carrots, and celery. Add the salt and pepper and saute for 5 to 10 minutes or until everything is softened and caramelized.

Next, add the garlic. Stir everything together and continue to cook until fragrant, about 30 seconds.

Add the couscous and the broth. Mix everything together and cover, reducing the heat to low. Simmer everything for 8 to 10 minutes until the broth is absorbed into everything.
