  • 1 1/3 cups uncooked pearl couscous
  • 2 cups chicken broth
  • 12 ounces (3 cups) cooked chicken, chopped

How to Make

  • Step 1: Get out a large skillet and heat the olive oil over medium high heat.

  • Step 2: Mix in the onion, carrots, and celery. Add the salt and pepper and saute for 5 to 10 minutes or until everything is softened and caramelized.

  • Step 3: Next, add the garlic. Stir everything together and continue to cook until fragrant, about 30 seconds.

  • Step 4: Add the couscous and the broth. Mix everything together and cover, reducing the heat to low. Simmer everything for 8 to 10 minutes until the broth is absorbed into everything.

  • Step 5: Add the pre-cooked chicken and mix everything together until it's heated through.
