"I love stuffing but I am not roasting a whole turkey, only a breast so I have put together this recipe for the stuffing to bake as a side dish. I use "Stove Top" stuffing but if you have another favorite use it. This is enough stuffing to accompany a 2 pound boneless breast. I said bake in 325 oven - this is the temperature that I am baking my turkey breast so they both finish up together. If you wish make the stuffing a day ahead and store in the fridge"

Step by Step Method
Step 1
Melt the butter in a skillet, medium heat, add mushrooms, celery, shallot and onion.
Step 2
Stir-fry for about 5 minutes, remove from heat.
Step 3
Meanwhile add the hot water to the stuffing mix, mix until the mix is moistened through.
Step 4
Add the cooked vegetables.
Step 5
Place in a baking dish, cover.
Step 6
Bake in a 325 oven for 45 minutes.
