Step 1

Flatten chicken to 1/4 inch thick.

Step 2

In a shallow bowl, combine the mustard and honey.

Step 3

In another shallow bowl, combine the bread crumbs and seasonings.

Step 4

Dip chicken in mustard mixture, then coat with crumb mixture.

Step 5

In a large skillet over medium heat, cook chicken in oil and butter for 5 to 6 minutes on each side or until meat is cooked through.

I made this recipe on 8/5/14 for mine and my SO's dinner,but most importantly it was made for the " Billboard Recipe Tag "game. Except for only using 1 Tablespoon of the mustard,the recipe was made exactly as it was written.The honey/mustard mixture worked so well with the seasonings in the breadcrumbs. The chicken turned out very moist and flavorful,and sometimes that's really hard to do with breast meat. I have to say," I'm very pleased to be the first one to MERP this recipe.
