Step by Step Method

Step 1

Whisk eggs, mustard, salt and pepper in large bowl to blend well.

Step 2

Melt 1 tablespoon butter in 12-inch-diameter non-stick skillet over medium heat.

Step 3

Add sausage and stir until brown, about 3 minutes.

Step 4

Add green onions and thyme and stir 1 minute.

Step 5

Transfer mixture to bowl.

Step 6

Add 2 tablespoons butter to same skillet; melt over medium heat.

Step 7

Add eggs and cheese; stir until eggs are softly set and cheese begins to melt, about 3 minutes.

Step 8

Add sausage; stir until eggs are just set, about 2 minutes longer.

Step 9

Transfer to platter.

Step 10

Garnish with thyme sprigs, if desired.

We had breakfast for dinner tonight because it was storming and no one wanted to grill! I'm so glad, because this was a delicious way to make eggs. I can't believe how great the addition of cream cheese was to the eggs.I used whipped cream cheese, so just kind of smooshed it in. It was so good with plain old turkey breakfast links, I can't imagine how over the top it must be with more substantial sausage. Next time! -
