Step by Step Method

Step 1

Heat olive oil in a large (12-inch) skillet over medium-high heat until it just starts to smoke. Add the tomatoes and season with salt and pepper.

Step 2

Saute, shaking pan frequently, until tomatoes soften and skins just start to wrinkle, about 2-4 minutes. Stir in garlic and continue to shake pan until garlic is fragrant.

Step 3

Stir in basil and extra-virgin olive oil and serve.

I loved this side dish...the hubby really didn't care for it...he thought it was mushy...he loves raw tomatoes but not cooked he said...of course I asked him what was in pizza sauce...he looked at me like a deer in headlights...anyway...I'll be making this again...but only for one...loved the garlic and basil together... made for "FYC" tag game...

WOW! These homegrown tomatoes sure packed a delicious punch! DH was in awe after the first bite. I did have to use dried basil and looking forward to making it with fresh. We both had the tomatoes as our last bite so it would linger. Absolutely going to made again! Thank you for sharing Nat! Made for Billboard Recipe Tag.

I halved this recipe, and made exactly as written, then enjoyed this all for myself on English muffins for breakfast. Using my own home grown tomatoes, the flavors were wonderful, little sweet morsels that just pop open in your mouth releasing an amazing flavor of both sweet and savory. All I can is "Italy on a plate".

Wow, I love the big bold flavor in these lovely tomatoes. I used a large red and yellow grape tomato. It worked beautifully in this dish. They were so large that I cut them in half. Resulting in a lovely thick sauce studded with tomato halves. Thank you for sharing this wonderful recipe FEM. I served the tomatoes with warm Naan bread to soak up the thick sauce. Made FYC tag game.
