Step by Step Method

Step 1

Butter a baking dish and place tomato halves in prepared dish, cut side up. Season tomatoes with salt and pepper.

Step 2

In a skillet over medium low heat melt 2 tablespoons of butter. Add garlic and saute for one minute. Add breadcrumbs and rosemary; toss. Spoon breadcrumb mixture over tomatoes.

Step 3

Preheat broiler. Set tomatoes 4-6 inches from heat source and broil until crumbs are brown and crisp and tomatoes are just warmed through. Transfer to a platter and serve.

Made one large tomato for a just me side, used Panko crumbs as that is what I had on hand and a sprinkle of crushed rosemary which I just added to my spice rack. Can't wait to make this with garden fresh tomatoes and rosemary.

Great tomato side! Did make a couple of changes, used panko bread crumbs and basil instead of the rosemary. Fast and easy to prepare. Will be made again. Thanks for sharing Ellie! Made for Billboard Recipe Tag.
