Ingredients

The ingredients are:
  • 2 tomatoes, cored, halved cross-wise
  • 2 tablespoons butter
  • 1 garlic clove, minced
  • 2/3 cup breadcrumbs, fresh (french bread is the best bread to use for the bread crumbs)
  • 1 1/2 teaspoons rosemary, minced (or your favorite herb)

How to Make

  • Step 1: Butter a baking dish and place tomato halves in prepared dish, cut side up. Season tomatoes with salt and pepper.

  • Step 2: In a skillet over medium low heat melt 2 tablespoons of butter. Add garlic and saute for one minute. Add breadcrumbs and rosemary; toss. Spoon breadcrumb mixture over tomatoes.

  • Step 3: Preheat broiler. Set tomatoes 4-6 inches from heat source and broil until crumbs are brown and crisp and tomatoes are just warmed through. Transfer to a platter and serve.
