Step by Step Method

FOR THE CHICKEN & SAUCE


Step 1

Coat your slow cooker with non-stick cooking spray.

Step 2

Sprinkle the chicken with seasoned salt and place in the slow cooker. Pour the root beer over the chicken.

Step 3

Cover and cook on high for 6 hours.

Step 4

Meanwhile, heat the oil in a medium saucepan over medium-high heat. Add the onion and cook for 5 minutes, until golden. stir in the ketchup, brown sugar, molasses, mustard and liquid smoke. Simmer, covered, for 10 minutes, stirring occasionally.

Step 5

Drain the liquid from the slow cooker, reserving 1/2 cup. Discard the remainder.

Step 6

Shred the chicken; stir in the warm sauce and the reserved cooking liquid.

FOR THE RAINBOW SLAW


Step 7

In a large bowl, whisk together the mayonnaise, cider vinegar, vegetable oil, sugar, celery seed, and black pepper.

Step 8

Fold in the broccoli slaw, shredded cabbage and sliced snow peas.

Step 9

Cover and refrigerate until serving.

Step 10

On each seeded roll, place 1/2 cup chicken mixture and 1/4 to 1/3 cup rainbow slaw.

I had this yesterday at my Rock Painting Group. She used 2 pork tenderloins instead of the chicken, and she used Sweet Baby Rays barbecue sauce instead of ketchup. The hostess served it with coleslaw and cornbread, for a delicious luncheon after we got done painting. Everyone raved about it, so that's 10 thumbs up from these wonderful ladies! My phone was dead when I went to take a picture, but if she makes it again, I will grab a picture for you.

Wowzers! Ten Stars! The pulled chicken (sauce) was so, so, so good! And the slaw is just excellent, too - and the perfect foil for the sweet sauce. I didn't want to buy a whole red cabbage and the slaw mix had a small amount in it. I compensated by adding some thinly sliced red bell pepper for some color. I must admit that I didn't use a slow cooker, but rather an Instant Pot for 12 minutes, which was perfect since I cut the recipe in half for just the two of us. We'll definitely be making this again! I can see using the sauce for pulled pork, too. Thanks for sharing!

Excellent pulled chicken recipe! We all really loved this. Who knew root beer would be so great in a chicken recipe. We loved the coleslaw, too. Thank you for a winner. I'll be putting this into my best of 2017 file.

Wow, SOOO Delicious! If I could give this recipe 10 stars, I would. Highly recommended and I and my family loved every bite. I love the fact that this recipe starts in the crockpot which makes it a life saver on those crazy busy days like I had today. The slaw is an absolute MUST as they brings these babies over the top good. I made a some changes; couldn't find broccoli slaw, so I added 1 stalk celery chopped, some scallions and some chopped red onion, and I used sugar snaps in place of the snow peas due to availability and I also added a chipotle and some garlic powder to the sauce. These are sooooo good. Try it you will Love it! Made it for FYC. Thank you breezermom for sharing!

Daily Inspiration

Loved these root beer pulled chicken sandwiches. So easy to make and really flavorful. I generally don't make cole slaw for pulled meat sandwiches, but I will from now on. My only regret is that I forgot to purchase the snowpeas and red cabbage. I did add some green onions and carrots to color it up though. Will definitely make these sandwiches again. : )
