Roasted Italian Sausage and Potatoes
"I started with a recipe from Prairie Home Cooking and messed around with it until I came up with something we liked a lot better. This is very easy, and a nice dish for a chilly evening. Note: this can be made with vegetarian sausage; add it toward the end of cooking time. If you want to use dried herbs, you'll have to experiment a little to get the correct amounts, sorry."

Step by Step Method
Step 1
Preheat oven to 400° Fahrenheit.
Step 2
Combine garlic, rosemary, thyme, savory, salt, pepper, potatoes and oil. Toss to mix.
Step 3
Spread potato mixture and sausage in a large baking or roasting pan (I use 9"x13").Roast for 30 minutes, or until just beginning to brown, turning several times. Add a little more oil if the potatoes appear too dry.
Step 4
Add peppers, onions and mushrooms and roast for 45 minutes more, turning occasionally, until potatoes are browned and tender.
Step 5
Serve as is, or sprinkle with mozzarella and return to oven just until cheese is melted.
