Step 1: Preheat oven to 400° Fahrenheit.
Step 2: Combine garlic, rosemary, thyme, savory, salt, pepper, potatoes and oil. Toss to mix.
Step 3: Spread potato mixture and sausage in a large baking or roasting pan (I use 9"x13").Roast for 30 minutes, or until just beginning to brown, turning several times. Add a little more oil if the potatoes appear too dry.
Step 4: Add peppers, onions and mushrooms and roast for 45 minutes more, turning occasionally, until potatoes are browned and tender.
Step 5: Serve as is, or sprinkle with mozzarella and return to oven just until cheese is melted.
