Ingredients

The ingredients are:
  • 1 clove garlic, minced
  • 1 sprig fresh rosemary, chopped
  • 1 sprig fresh thyme, chopped
  • 1 sprig fresh savory, chopped
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon pepper, or to taste
  • 1 tablespoon olive oil, plus more if needed
  • 4 medium potatoes, quartered
  • 1 pound Italian sausage
  • 2 large bell peppers, seeded and cut into eighths
  • 2 large yellow onions, cut into eighths
  • 1 pound fresh mushrooms
  • 4 ounces shredded mozzarella cheese (optional)

How to Make

  • Step 1: Preheat oven to 400° Fahrenheit.

  • Step 2: Combine garlic, rosemary, thyme, savory, salt, pepper, potatoes and oil. Toss to mix.

  • Step 3: Spread potato mixture and sausage in a large baking or roasting pan (I use 9"x13").Roast for 30 minutes, or until just beginning to brown, turning several times. Add a little more oil if the potatoes appear too dry.

  • Step 4: Add peppers, onions and mushrooms and roast for 45 minutes more, turning occasionally, until potatoes are browned and tender.

  • Step 5: Serve as is, or sprinkle with mozzarella and return to oven just until cheese is melted.
