Step by Step Method

Step 1

Preheat the oven to 375°F.

Step 2

Lightly oil a roasting pan that fits the tomatoes snugly as described in the next step below.

Step 3

Halve the tomatoes and place them, cut side up, in the roasting pan. They should fit snugly with little or no space between them.

Step 4

Crush the garlic with a pinch of salt, then beat it with the honey, olive oil, Italian seasoning, and a good grinding of pepper. This process can be done with a mortar and pestle.

Step 5

Spoon this sticky, garlicky mixture over the cherry tomatoes. Roast for about 30 minutes, until golden, juicy, and bubbling.

Step 6

Serve over rice, on its own, or on toasted baguette or ciabatta bread slices.

I had a carton of cherry tomatoes that were obviously picked green and had very little taste. Then I spied this recipe and suddenly the tomatoes were wonderful. I was concerned that the pan would be a mess after 30 minutes at 375F - not so. The tomatoes were perfect and nothing stuck to the pan.This recipe can be a perfect companion to so many recipes. It will be a favorite and will be made any many times

These tomato's complimented our breakfast dish wonderfully. Sticky sweet and delicious. Except for halving the recipe I made the recipe exactly as written, and as I did not have a smaller roasting pan I used a smaller aluminium baking tray, which fitted the tomato's snuggly as written. They do shrink a little when baking ~ so they do need to fit snuggly! I served the tomato's on toast with eggs, beans and bacon. I know it is an especially good recipe when DH comments on it, which he did. He really loved the sweetness and flavours of the tomato's baked like this. We loved roasted tomato's here and this will be one of my favourite ways of cooking them now. Such a simple, easy and delicious way to roast tomato's!
